I’ll start by catching up with yesterday’s lunch, dinner, snacks and this morning’s breakfast….but keep reading for the winner of my little giveaway
Makeshift Easy Egg Salad:
2 hard boiled eggs
1-2 tbsp low fat/light maynnaise
a dash of yellow mustard
mash up with a fork and enjoy!
…on a bed of spinach and a slice of whole grain bread. Side of mango.
Dinner: Roasted zucchini, sweet potato, onions, carrots and garlic cloves @ 400 degrees for 40 minutes. Place on top of 1/2 cup instant brown rice that’s been sauteed in a little garlic and onion, then serve with another side of whole grain bread (with a garlic clove spread on it)…yummmmmy.
Snacks: Hocho (diet hot chocolate) and 1/2 a serving of TJ’s kettlecorn.
Breakfast this morning: TJ’s apple chicken sausage with 2 eggs fried on top of a piece of 7 grain bread. Served with a side of hazelnut coffee.
Fun fact: I just learned that they are building an MLK memorial in DC that’s due to open this August, 2011. I’m SO excited to go see it. MLK is the first “private” person to have their own federal holiday, as well as the first to have their own memorial on the National Mall. See here for details.
